Vegan Vanilla-Pear Cake

With the first snow laying on the ground I realized that I’m not quite ready to let go of autumn. I just love the rustling of the leaves, the crisp air and sunbeams peeking trough the trees – but of course also the cozy evenings inside with a hot tea, snuggled up to my love. So I made a cake, that captures all these feelings. Juicy, sweet pear mixed with the hearty flavor of vanilla. If you’re in for a little more autumn – go give it a try!

Ingredients

(for a 20 cm loaf tin)

Batter

150 g vegan butter

150 g sugar

200 g flour

2 dl mylk

2 tbsp chia seeds + 4 tbsp water

10 g vanilla sugar

1 tsp baking powder

1/2 tsp baking soda

250 g pears

Icing

40 g butter

150 g icing sugar

1-2 tsp mylk

1/4 tsp bourbon vanilla

Instructions

(Preparation time 20 Minutes)

Pour the chia seeds and water into a glass, stir and set aside. Preheat the oven to 180°C fan function and prepare the baking tin by covering it with a tiny bit of butter or parchment paper.
Put the butter, sugar, vanilla sugar and soaked chia seeds in a bowl an mix well. Cut the pears into small pieces. Add the the flour, baking soda and baking powder into the batter. Blend everything together and slowly add the mylk. Mix in the pears with a spoon in the end. Put the dough into the baking tin and bake it for 40-50 minutes. Meanwhile prepare the icing by mixing the butter, icing sugar and bourbon vanilla. Add some mylk if you prefer a more fluid texture. Then take cake out of the oven and let it cool down. Then cover it with the icing – voilà!
