Vegan Banana-Coco-Lemon Popsicles

Since I was a kid I always made popsicles in the summer. Nothing too fancy, just a few ingredients that we had at home mixed together and put in the freezer. Such a simple pleasure. As I got older I started experimenting with different flavors. Recently I stumbled upon a really delicious mix that I wanted to share with you! It’s perfectly sweet and fresh at the same time. Plus the recipe only contains four ingredients. Just how I love it! … More Vegan Banana-Coco-Lemon Popsicles

Tromsø

For my mums 50th birthday she wanted us all to go on holiday together so she rented a beautiful AirBnb in Tromsø. Oh my, what a great idea that was. I immediately fell in love with the landscape and the never ending days. Literally, the sun doesn’t set far enough under the horizon so there’s no actual night. … More Tromsø

Vegan no bake Raspberry Cheesecake

Here in Switzerland it’s been quite hot for the last few weeks and all I’ve been thinking about was how to cool off. Obviously the first thing that came to my mind was cool foods. I’ve been experimenting with no bake cheesecakes for a long time and so my go to recipe evolved over time. I’m really happy with the outcome these days so I thought it was about time to share it with you. It’s the perfect dessert on these hot summer days and I can’t tell you how addicting the base is.. I can only recommend trying it for yourself. … More Vegan no bake Raspberry Cheesecake

Salad Topping Two Ways

As the weather is getting warmer my cravings are shifting towards fresh fruits and salads. But as we all know well, they don’t keep us nourished for a whole day – that’s why I like to add little bits and bobs to my salads. Mostly it’s roasted veggies, some sort of cheese or eggs. But I also love to add seeds and nuts, even though I do find them a little boring when plain. That’s why I came up with two salad toppings! I made them for my mums birthday brunch and her guests loved it! … More Salad Topping Two Ways

Fruity Elderflower Galette (with vegan option)

this weekend I finally took on the challenge to make one of those beautiful galettes I saw for months (or years?) in my Instagram feed. And it wasn’t a challenge at all – it’s so easy to make! And I bet you have all the ingredients it takes at home, as you only need flour, butter, water, salt, sugar and literally any fruit you have on hand. It almost can’t get any simpler! So if you’d like to impress someone with a fancy looking breakfast or dessert, that’s actually super easy, I’d recommend you to try a galette. My version is with elderflowers as they are all over the place at the moment and their smell is insanely delicious. Hope you enjoy it! … More Fruity Elderflower Galette (with vegan option)

Vegan Nectarine&Poppy-Seed Cake

When I was about 14 I had a really intense Cupcake phase. I remember trying out almost all of the recipes in this one book I had around that time until my family urged me to stop as they couldn’t handle more sugar and our neighbors had their faire share too. One of the recipes I tried out was with poppy seeds – which was new to me at that time. If I remember right it was with a lemon butter cream frosting, which was great but what I liked most, was the crunchy texture of the cake. So when I was brainstorming for last weeks cake recipe this came to my mind. … More Vegan Nectarine&Poppy-Seed Cake

Smoothie Ice Cubes three ways

As I live in Switzerland, I don’t have access to local exotic fruits such as mangoes or pineapples. But because I love these fruits so much I treat myself a few times a year and buy one. Sadly, they do not taste anything like when you’re somewhere where they grow locally. The closest I get to the sweetness level and taste of locally grown fruits is with dried ones. It took me a while to find some, that are not overloaded with sugar and other additives but now I’m really happy with the ones from Fru&Nus, as they taste great! … More Smoothie Ice Cubes three ways

Vegan Berry&Rhubarb-Crumble-Cake

At the moment I’m really over the moon with rhubarbs but also that berries are finally coming into season. I could basically live off of these! Last weekend the very talented Olga from …magazin was talking about crumble, and as I haven’t made one in a way to long time, I felt inspired to do so. Obviously I had to make one with rhubarbs and berries.. because, you know, it’s super delicious! But as you maybe know from previous posts, I bake for MaxMoriz (it’s a vegan ‚Mittagsbuffet‘ in Aarau, Switzerland), so it had to be a cake. I simply made a less juicy (but still juicy) crumble on top of a fluffy and light vanilla cake base. Turned out really delicious and it’s the perfect alternative if you want to have all the perks of crumble minus the mess.. Have a nice day! … More Vegan Berry&Rhubarb-Crumble-Cake

Vegan Rhubarb & Coconut Cake

Last weekend I was working at the market and there were these beautiful rhubarbs. I immediately knew, I had to buy some and cook something with them, as I just love rhubarbs! As a kid, I used to pick them fresh from the garden, dip them in sugar and eat them raw. I tried this last year again, but it was way to sour. So now I mostly make compote out of it and eat it with my breakfast bowl. But as you know, I love to bake and this is why – obviously – I came up with a rhubarb cake recipe. It’s fluffy, not too soggy or too sweet, with just a perfect amount of sourness. … More Vegan Rhubarb & Coconut Cake

Creamy Wild Garlic Pesto

So it was spring equinox and our forests start blooming and getting all green again. This means a very happy me! Obviously I had to go for a long walk to fill my lungs with that fresh spring air and soak in all those soft sunbeams. On our way trough the woods, we passed a spot, where my brother and I used to drive around with our bikes. It’s such a magical place with a lot of very small paths and every spring it was filled with a ton of wild garlic and flowers. We harvested quite a bit of the garlic on the way home and I made a fresh garlic pesto that night. I think it tasted even a bit better, because it was from this magical childhood place. … More Creamy Wild Garlic Pesto
