Homemade Peanutbuttercups (v, gf, df)

A long time ago my sister introduced me to Peanutbuttercups. She brought some home from the States if I remember right and I was immediately hooked. I mean.. they’re just the perfect combination of sweet and salty, bitesized and just all around addicting. In the first few years after she introduced me to them there was no store in Switzerland that sold them but then finally it got more popular and they started showing up everywhere. I may have had a Peanutbuttercup overdose… and I definitely needed a pause after that, but then a few weeks ago I remembered them and I thought, why not make them myself? Takes so few ingredients and time and is just delicious! … More Homemade Peanutbuttercups (v, gf, df)

Nut Butter Three Ways

This actually is the easiest recipe I’ve ever made. It only takes one ingredients and eight minutes of time. As you already know from the titel – it’s nut butter! I don’t know why it took me so long to try this but I’m so glad I finally did. Making it myself is super convenient for me, as I go trough one jar every one or two weeks. I put it on my morning porridge, in a sauce or eat it just plain. I might have nut butter addiction.. Also, I’m just really obsessed with the different brown tones of different nut butters and their texture. So pleasing to look at! … More Nut Butter Three Ways

Vegan Pomelo-Lemon Tart

So we probably all know and love lemons. I almost always have one in my fridge because I use them so much. We probably also all know their sisters orange, grapefruit, lime and tangerine but I got the feeling that not so many people know pomelos. This might be because they mostly grow in Israel and South Africa. I myself got to know them when a friend of mine introduced me to them a few years ago and fell in love straight away. … More Vegan Pomelo-Lemon Tart

Vegan Plum & Lemon Cake

As August came around the plums in our garden started ripening and we had them at the market for the first time this year. Exiting times for a plum fan like me! Many of them didn’t make it into the kitchen and were devoured straight away, but luckily we had enough so that I could start experimenting with them. As it’s still quite hot here in Switzerland (and probably everywhere where it’s still summer) I went for a light combo with lemon. I do find that lemon peel makes even rather sweet cakes lighter, but I also just love their taste in general. So here it is: a juicy plum & lemon cake! … More Vegan Plum & Lemon Cake

Vegan Banana-Coco-Lemon Popsicles

Since I was a kid I always made popsicles in the summer. Nothing too fancy, just a few ingredients that we had at home mixed together and put in the freezer. Such a simple pleasure. As I got older I started experimenting with different flavors. Recently I stumbled upon a really delicious mix that I wanted to share with you! It’s perfectly sweet and fresh at the same time. Plus the recipe only contains four ingredients. Just how I love it! … More Vegan Banana-Coco-Lemon Popsicles

Fruity Elderflower Galette (with vegan option)

this weekend I finally took on the challenge to make one of those beautiful galettes I saw for months (or years?) in my Instagram feed. And it wasn’t a challenge at all – it’s so easy to make! And I bet you have all the ingredients it takes at home, as you only need flour, butter, water, salt, sugar and literally any fruit you have on hand. It almost can’t get any simpler! So if you’d like to impress someone with a fancy looking breakfast or dessert, that’s actually super easy, I’d recommend you to try a galette. My version is with elderflowers as they are all over the place at the moment and their smell is insanely delicious. Hope you enjoy it! … More Fruity Elderflower Galette (with vegan option)

Vegan Nectarine&Poppy-Seed Cake

When I was about 14 I had a really intense Cupcake phase. I remember trying out almost all of the recipes in this one book I had around that time until my family urged me to stop as they couldn’t handle more sugar and our neighbors had their faire share too. One of the recipes I tried out was with poppy seeds – which was new to me at that time. If I remember right it was with a lemon butter cream frosting, which was great but what I liked most, was the crunchy texture of the cake. So when I was brainstorming for last weeks cake recipe this came to my mind. … More Vegan Nectarine&Poppy-Seed Cake

Smoothie Ice Cubes three ways

As I live in Switzerland, I don’t have access to local exotic fruits such as mangoes or pineapples. But because I love these fruits so much I treat myself a few times a year and buy one. Sadly, they do not taste anything like when you’re somewhere where they grow locally. The closest I get to the sweetness level and taste of locally grown fruits is with dried ones. It took me a while to find some, that are not overloaded with sugar and other additives but now I’m really happy with the ones from Fru&Nus, as they taste great! … More Smoothie Ice Cubes three ways

Vegan Berry&Rhubarb-Crumble-Cake

At the moment I’m really over the moon with rhubarbs but also that berries are finally coming into season. I could basically live off of these! Last weekend the very talented Olga from …magazin was talking about crumble, and as I haven’t made one in a way to long time, I felt inspired to do so. Obviously I had to make one with rhubarbs and berries.. because, you know, it’s super delicious! But as you maybe know from previous posts, I bake for MaxMoriz (it’s a vegan ‚Mittagsbuffet‘ in Aarau, Switzerland), so it had to be a cake. I simply made a less juicy (but still juicy) crumble on top of a fluffy and light vanilla cake base. Turned out really delicious and it’s the perfect alternative if you want to have all the perks of crumble minus the mess.. Have a nice day! … More Vegan Berry&Rhubarb-Crumble-Cake
