This past days have felt pretty spring-ish. The sun was out most days, birds were chirping outside my window and it was so warm. Quite early, but still, I enjoy it a lot! I’ll admit it, I’m just a warm-weather person. I can’t help but love it, even tough I know it’s not a good sign.
But let’s return to happy thoughts. As it felt so spring-ish, my body started craving fresh sweets. So this week it’ll be a very lemony lemon cake. And as I’m having more time on my hands due to my semester break I really enjoy spending more time with my shoots (therefore the overload of pictures in this post). Vegan Double Chocolate Cake

As it was my birthday yesterday, I wanted to make a special cake this week. When I was a kid, my mum asked me every year what cake I wanted for my birthday and every year I wished for her chocolate cake. When I got older, I started baking my own cakes and experimented with all different kind of flavors. But this year I had big cravings for a chocolate cake. I didn’t take my mums recipe (which is absolutely great and I love it) because I wanted something chocolatier. So I came up with my own recipe and it turned out to be my favorite cake I’ve ever made! It is so rich in flavor, perfectly moist and I wish I could eat it all day. I know this sound exaggerating but it is *so* good!

Every year when we visited our great grandmother around Christmas she used to serve us Russenzopf. It’s a traditional cake in western Europe and I love it with my whole heart. It’s perfectly moist (you probably know by now that I love moist cakes), it has a delicious hazelnut filling and is a little sour on top – just how I like it. Vegan Orange-Ginger Cake

Every year I’m really exited for citrus season to start. I love the smell and taste of every single citrus fruit, but oranges do hold a special place in my heart. Probably it’s my fathers love for them, that he passed on to me. Every winter he would buy big bags full of oranges and store a few of them in the fridge, because they taste better cold.
