Vegan Apple-Chai Muffins

When I got the offer to bake for MaxMoriz I immediately knew, that I want to bake chai-muffins (hello all my fellow chai-fans), but since it was only October I had to wait a little until it gets colder. As you can tell from the pictures below, I tested the recipe, when it was still warm enough to picknick outside. But now finally the time has come to share the recipe with you. So here they are – hearty pre-christmas apple-chai muffins!

Ingredients

(for 12 muffins)

2 tbsp chia seeds + 4 tbsp water

6 tbsp plant based sweetener (e.g. maple or agave syrup)

200 g flour

120 g vegan butter

200 g apple

2 dl nut mylk (e.g. hazelnut, cashew)

1 tsp cinnamon

1 tsp clove

1 tsp fresh grated ginger

1/2 tsp cardamom

1 tsp baking powder

1/2 tsp baking soda¨

Optional: edible gold powder

Instructions

(Preparation time 20 minutes)

Pour the chia seeds and water into a glass, stir and set aside. Preheat the oven to 180°C fan function and prepare the muffin tin by covering it with a tiny bit of butter or oil.
Put the butter, sweetener and soaked chia seeds in a bowl an mix well. Cut the apples into small pieces. Add the the flour, baking powder, baking soda and spices into the batter. Blend everything together and slowly add the mylk. Mix in the pears with a spoon in the end. Put the dough into the muffin tin and bake it for 20-30 minutes.

Take the muffins out of the oven and let them cool down. If you like to give it a little extra christmas vibe you can sprinkle it with edible gold powder. Enjoy!
