Vegan Rhubarb & Coconut Cake

Last weekend I was working at the market and there were these beautiful rhubarbs. I immediately knew, I had to buy some and cook something with them, as I just love rhubarbs! As a kid, I used to pick them fresh from the garden, dip them in sugar and eat them raw. I tried this last year again, but it was way to sour. So now I mostly make compote out of it and eat it with my breakfast bowl. But as you know, I love to bake and this is why – obviously – I came up with a rhubarb cake recipe. Coconut-Strawberry-Granola

As a student I oftentimes don’t have a lot of time to prepare food. Therefore I’m always thankful for my past self if I prepared something in advance. For example homemade granola. It’s so freaking delicious, quite easy to make and stored right, keeps up to three weeks. Perfect for busy mornings (or as a late evening snack). So when I got the opportunity to create a recipe for Fru&Nus I immediately thought granola. They have a big variety of nuts and dried fruits (and they don’t add sugar, flavorings, sulfur dioxide, dyes or acidifiers) which didn’t make it easy to choose. In the end my desire for warmer days won and I chose a coconut and strawberry base and added a few other yummy nuts to the mix. It turned out perfectly chunky and crunchy.
