Vegan Berry&Rhubarb-Crumble-Cake

At the moment I’m really over the moon with rhubarbs but also that berries are finally coming into season. I could basically live off of these! Last weekend the very talented Olga from …magazin was talking about crumble, and as I haven’t made one in a way to long time, I felt inspired to do so. Obviously I had to make one with rhubarbs and berries.. because, you know, it’s super delicious! But as you maybe know from previous posts, I bake for MaxMoriz (it’s a vegan ‚Mittagsbuffet‘ in Aarau, Switzerland), so it had to be a cake. I simply made a less juicy (but still juicy) crumble on top of a fluffy and light vanilla cake base. Vegan Rhubarb & Coconut Cake

Last weekend I was working at the market and there were these beautiful rhubarbs. I immediately knew, I had to buy some and cook something with them, as I just love rhubarbs! As a kid, I used to pick them fresh from the garden, dip them in sugar and eat them raw. I tried this last year again, but it was way to sour. So now I mostly make compote out of it and eat it with my breakfast bowl. But as you know, I love to bake and this is why – obviously – I came up with a rhubarb cake recipe. Vegan Rose Appletart

As you probably know from my Instagram or previous posts, I work at a farmers market. We sell all kinds of local veggies and fruits and this week we had the most beautiful pink apples. They’re called Crips Pink, which is the weirdest name for an apple, that I’ve ever heard. Nevertheless they have a very beautiful pink peel with tiny white-ish dots on it and they have a really nice sweet taste and they’re perfectly crunchy and juicy. Normally I prefer sour apples but I thought these were perfect for an apple tart. And they were! They don’t get mushy and have a perfectly balanced taste between sweet and sour after baking. If you want to make something a little more special for easter (or for no specific reason) I’ll really recommend you trying this rose apple tart. Passionfruit are weirdly beautiful fruits. Their skin has a whole color palette from red and green to dark brown or almost grey, and on the inside they surprise you with a bright yellow or orange. Even tough this wrinkled fruit with its slimy center puts off a lot of people, it hasn’t the same effect on me. I just love the taste and consistency so much!
