Vegan Berry&Rhubarb-Crumble-Cake

At the moment I’m really over the moon with rhubarbs but also that berries are finally coming into season. I could basically live off of these! Last weekend the very talented Olga from …magazin was talking about crumble, and as I haven’t made one in a way to long time, I felt inspired to do so. Obviously I had to make one with rhubarbs and berries.. because, you know, it’s super delicious! But as you maybe know from previous posts, I bake for MaxMoriz (it’s a vegan ‚Mittagsbuffet‘ in Aarau, Switzerland), so it had to be a cake. I simply made a less juicy (but still juicy) crumble on top of a fluffy and light vanilla cake base. Last weekend I was working at the market and there were these beautiful rhubarbs. I immediately knew, I had to buy some and cook something with them, as I just love rhubarbs! As a kid, I used to pick them fresh from the garden, dip them in sugar and eat them raw. I tried this last year again, but it was way to sour. Vegan Vanilla-Passionfruit-Cake

Passionfruit are weirdly beautiful fruits. Their skin has a whole color palette from red and green to dark brown or almost grey, and on the inside they surprise you with a bright yellow or orange. Even tough this wrinkled fruit with its slimy center puts off a lot of people, it hasn’t the same effect on me. I just love the taste and consistency so much!
