Vegan Plum & Lemon Cake

As August came around the plums in our garden started ripening and we had them at the market for the first time this year. Exiting times for a plum fan like me! Many of them didn’t make it into the kitchen and were devoured straight away, but luckily we had enough so that I could start experimenting with them. As it’s still quite hot here in Switzerland (and probably everywhere where it’s still summer) I went for a light combo with lemon. I do find that lemon peel makes even rather sweet cakes lighter, but I also just love their taste in general. So here it is: a juicy plum & lemon cake! … More Vegan Plum & Lemon Cake

Vegan no bake Raspberry Cheesecake

Here in Switzerland it’s been quite hot for the last few weeks and all I’ve been thinking about was how to cool off. Obviously the first thing that came to my mind was cool foods. I’ve been experimenting with no bake cheesecakes for a long time and so my go to recipe evolved over time. I’m really happy with the outcome these days so I thought it was about time to share it with you. It’s the perfect dessert on these hot summer days and I can’t tell you how addicting the base is.. I can only recommend trying it for yourself. … More Vegan no bake Raspberry Cheesecake

Vegan Nectarine&Poppy-Seed Cake

When I was about 14 I had a really intense Cupcake phase. I remember trying out almost all of the recipes in this one book I had around that time until my family urged me to stop as they couldn’t handle more sugar and our neighbors had their faire share too. One of the recipes I tried out was with poppy seeds – which was new to me at that time. If I remember right it was with a lemon butter cream frosting, which was great but what I liked most, was the crunchy texture of the cake. So when I was brainstorming for last weeks cake recipe this came to my mind. … More Vegan Nectarine&Poppy-Seed Cake

Vegan Berry&Rhubarb-Crumble-Cake

At the moment I’m really over the moon with rhubarbs but also that berries are finally coming into season. I could basically live off of these! Last weekend the very talented Olga from …magazin was talking about crumble, and as I haven’t made one in a way to long time, I felt inspired to do so. Obviously I had to make one with rhubarbs and berries.. because, you know, it’s super delicious! But as you maybe know from previous posts, I bake for MaxMoriz (it’s a vegan ‚Mittagsbuffet‘ in Aarau, Switzerland), so it had to be a cake. I simply made a less juicy (but still juicy) crumble on top of a fluffy and light vanilla cake base. Turned out really delicious and it’s the perfect alternative if you want to have all the perks of crumble minus the mess.. Have a nice day! … More Vegan Berry&Rhubarb-Crumble-Cake

Vegan Rhubarb & Coconut Cake

Last weekend I was working at the market and there were these beautiful rhubarbs. I immediately knew, I had to buy some and cook something with them, as I just love rhubarbs! As a kid, I used to pick them fresh from the garden, dip them in sugar and eat them raw. I tried this last year again, but it was way to sour. So now I mostly make compote out of it and eat it with my breakfast bowl. But as you know, I love to bake and this is why – obviously – I came up with a rhubarb cake recipe. It’s fluffy, not too soggy or too sweet, with just a perfect amount of sourness. … More Vegan Rhubarb & Coconut Cake

Vegan Vanilla-Passionfruit-Cake

Passionfruit are weirdly beautiful fruits. Their skin has a whole color palette from red and green to dark brown or almost grey, and on the inside they surprise you with a bright yellow or orange. Even tough this wrinkled fruit with its slimy center puts off a lot of people, it hasn’t the same effect on me. I just love the taste and consistency so much! Unfortunately these little delicious fruits aren’t local where I live, so I almost never buy them. But this week I couldn’t resist them and I turned them into a crunchy-sweet cake recipe. … More Vegan Vanilla-Passionfruit-Cake

Vegan Classic Grandma Bundt

As you’ve probably noticed, I have quite the big sweet tooth but this week I was in the mood for something slightly less sweet. Even though I named this recipe ‚classic grandma bundt‘ I’ve never seen my grandmas making this cake. I guess it’s just a picture I have in my head from movies or books. But anyway. I love this bundt because it’s not to sweet and it tastes great with butter and jam (so you can eat cake for breakfast which is a pretty great start to any day). Have a lovely week folks! … More Vegan Classic Grandma Bundt

Vegan Raspberry Coconut Cake

As of late I’m really looking forward to summer. As I’ve written in my previous post (this one) it feels pretty spring-ish around here and that really makes me miss summer. So in honor of my favorite time of the year I made a raspberry and coconut cake. Doesn’t it sound like summer in your ears? Also as an old german proverb says ‚sour makes funny‘ and frozen raspberries definitely are at least a tad bit sour.
Also featured in this post are flowers my boss from the market I work at gave to me. I mean.. isn’t that color just lovely? But not quite as lovely as she is.. I adore people that radiate so much love around them. Hope you’re having a great weekend and enjoy the recipe! … More Vegan Raspberry Coconut Cake

Vegan Lemon Cake

This past days have felt pretty spring-ish. The sun was out most days, birds were chirping outside my window and it was so warm. Quite early, but still, I enjoy it a lot! I’ll admit it, I’m just a warm-weather person. I can’t help but love it, even tough I know it’s not a good sign.
But let’s return to happy thoughts. As it felt so spring-ish, my body started craving fresh sweets. So this week it’ll be a very lemony lemon cake. And as I’m having more time on my hands due to my semester break I really enjoy spending more time with my shoots (therefore the overload of pictures in this post). Happy weekend friends! … More Vegan Lemon Cake

Vegan Double Chocolate Cake

As it was my birthday yesterday, I wanted to make a special cake this week. When I was a kid, my mum asked me every year what cake I wanted for my birthday and every year I wished for her chocolate cake. When I got older, I started baking my own cakes and experimented with all different kind of flavors. But this year I had big cravings for a chocolate cake. I didn’t take my mums recipe (which is absolutely great and I love it) because I wanted something chocolatier. So I came up with my own recipe and it turned out to be my favorite cake I’ve ever made! It is so rich in flavor, perfectly moist and I wish I could eat it all day. I know this sound exaggerating but it is *so* good!
I really hope you give it a try and love it as much as I do. … More Vegan Double Chocolate Cake
