this weekend I finally took on the challenge to make one of those beautiful galettes I saw for months (or years?) in my Instagram feed. And it wasn’t a challenge at all – it’s so easy to make! And I bet you have all the ingredients it takes at home, as you only need flour, butter, water, salt, sugar and literally any fruit you have on hand. It almost can’t get any simpler! So if you’d like to impress someone with a fancy looking breakfast or dessert, that’s actually super easy, I’d recommend you to try a galette. Vegan Berry&Rhubarb-Crumble-Cake

At the moment I’m really over the moon with rhubarbs but also that berries are finally coming into season. I could basically live off of these! Last weekend the very talented Olga from …magazin was talking about crumble, and as I haven’t made one in a way to long time, I felt inspired to do so. Obviously I had to make one with rhubarbs and berries.. because, you know, it’s super delicious! But as you maybe know from previous posts, I bake for MaxMoriz (it’s a vegan ‚Mittagsbuffet‘ in Aarau, Switzerland), so it had to be a cake. I simply made a less juicy (but still juicy) crumble on top of a fluffy and light vanilla cake base. Vegan Rhubarb & Coconut Cake

Last weekend I was working at the market and there were these beautiful rhubarbs. I immediately knew, I had to buy some and cook something with them, as I just love rhubarbs! As a kid, I used to pick them fresh from the garden, dip them in sugar and eat them raw. I tried this last year again, but it was way to sour. Vegan Rose Appletart

As you probably know from my Instagram or previous posts, I work at a farmers market. We sell all kinds of local veggies and fruits and this week we had the most beautiful pink apples. They’re called Crips Pink, which is the weirdest name for an apple, that I’ve ever heard. Nevertheless they have a very beautiful pink peel with tiny white-ish dots on it and they have a really nice sweet taste and they’re perfectly crunchy and juicy. Normally I prefer sour apples but I thought these were perfect for an apple tart. And they were! They don’t get mushy and have a perfectly balanced taste between sweet and sour after baking. If you want to make something a little more special for easter (or for no specific reason) I’ll really recommend you trying this rose apple tart. Vegan Vanilla-Passionfruit-Cake

Passionfruit are weirdly beautiful fruits. Their skin has a whole color palette from red and green to dark brown or almost grey, and on the inside they surprise you with a bright yellow or orange. Even tough this wrinkled fruit with its slimy center puts off a lot of people, it hasn’t the same effect on me. I just love the taste and consistency so much! Coconut-Strawberry-Granola

As a student I oftentimes don’t have a lot of time to prepare food. Therefore I’m always thankful for my past self if I prepared something in advance. For example homemade granola. It’s so freaking delicious, quite easy to make and stored right, keeps up to three weeks. Perfect for busy mornings (or as a late evening snack). So when I got the opportunity to create a recipe for Fru&Nus I immediately thought granola. They have a big variety of nuts and dried fruits (and they don’t add sugar, flavorings, sulfur dioxide, dyes or acidifiers) which didn’t make it easy to choose. In the end my desire for warmer days won and I chose a coconut and strawberry base and added a few other yummy nuts to the mix. It turned out perfectly chunky and crunchy. Vegan Classic Grandma Bundt

As you’ve probably noticed, I have quite the big sweet tooth but this week I was in the mood for something slightly less sweet. Even though I named this recipe ‚classic grandma bundt‘ I’ve never seen my grandmas making this cake. I guess it’s just a picture I have in my head from movies or books. But anyway. I love this bundt because it’s not to sweet and it tastes great with butter and jam (so you can eat cake for breakfast which is a pretty great start to any day). Vegan Raspberry Coconut Cake

As of late I’m really looking forward to summer. As I’ve written in my previous post (this one) it feels pretty spring-ish around here and that really makes me miss summer. So in honor of my favorite time of the year I made a raspberry and coconut cake. Doesn’t it sound like summer in your ears? Also as an old german proverb says ‚sour makes funny‘ and frozen raspberries definitely are at least a tad bit sour.
Also featured in this post are flowers my boss from the market I work at gave to me. I mean.. isn’t that color just lovely? But not quite as lovely as she is..
