Fruity Elderflower Galette (with vegan option)

this weekend I finally took on the challenge to make one of those beautiful galettes I saw for months (or years?) in my Instagram feed. And it wasn’t a challenge at all – it’s so easy to make! And I bet you have all the ingredients it takes at home, as you only need flour, butter, water, salt, sugar and literally any fruit you have on hand. It almost can’t get any simpler! Vegan Berry&Rhubarb-Crumble-Cake

At the moment I’m really over the moon with rhubarbs but also that berries are finally coming into season. I could basically live off of these! Obviously I had to make one with rhubarbs and berries.. because, you know, it’s super delicious! Creamy Wild Garlic Pesto

So it was spring equinox and our forests start blooming and getting all green again. This means a very happy me! Obviously I had to go for a long walk to fill my lungs with that fresh spring air and soak in all those soft sunbeams. On our way trough the woods, we passed a spot, where my brother and I used to drive around with our bikes. It’s such a magical place with a lot of very small paths and every spring it was filled with a ton of wild garlic and flowers. Coconut-Strawberry-Granola

As a student I oftentimes don’t have a lot of time to prepare food. Therefore I’m always thankful for my past self if I prepared something in advance. For example homemade granola. It’s so freaking delicious, quite easy to make and stored right, keeps up to three weeks. Perfect for busy mornings (or as a late evening snack). So when I got the opportunity to create a recipe for Fru&Nus I immediately thought granola. They have a big variety of nuts and dried fruits (and they don’t add sugar, flavorings, sulfur dioxide, dyes or acidifiers) which didn’t make it easy to choose. In the end my desire for warmer days won and I chose a coconut and strawberry base and added a few other yummy nuts to the mix. It turned out perfectly chunky and crunchy.
